I can always convince my kids to eat their carrots by telling them that carrots are good for their eyes.
And they'll need their eyes to be in good shape if they want to play more video games, right?
It's totally a mom-move to be all, "Eat your carrots! They're good for your eyes!" But I have no shame in using that line. None whatsoever.
So when I'm looking to cook carrots, it's naturally going to go down in the Instant Pot (like practically everything else I cook)...
These Instant Pot carrots are nothing fancy.
Just telling you that straight up.
They're plain and my kids still eat them, but they're a great starting point if you want to make honey thyme glazed carrots (recipe to come some day!) or butter herb carrots (again, another recipe for another day). Pressure Cooker Carrots are a Game Changer!
It's hard to go back to cooking carrots any other way once you've made them in a pressure cooker.Although I think that applies to anything I've ever cooked in the Instant Pot though...
It's so ridiculously easy. It's really just a tiny bit of prep to cut the carrots.
Even easier if you skip the peeling, like I do. I'm too lazy to peel. It's like the kitchen equivalent of folding laundry.
So I just make sure to really scrub and clean those carrots first with a vegetable brush. Works great and the kids have never complained about the peels.
Then you toss them in, seal it up, and let the the Instant Pot do its magic.

A Note About Cooking Time for Carrots in the Instant Pot
If you prefer crisper carrots, then simply reduce the cooking time by a minute.Or if you prefer soft and mushy carrots, then add a minute to the suggested cooking time.
It really does come down to personal preference though.
And if you have picky kids like I do, then you know how important those personal preferences can be. It can be the difference between eating ALLLL the carrots or pushing them around the plate like they're the most. disgusting. food. ever.

INGREDIENTS
- 1-2 carrots per person, peeled (optional) and sliced
- 1 cup water
- Pinch of salt
INSTRUCTIONS

- Quick release.
- Serve plain, with Herbamare, or with a bit of butter and salt and pepper.
